Characteristics of Mexican Cuisine
Mexican cuisine has a long history dating back thousands of years, to the original inhabitants of so-called Mesoamerica. The foundation of the cuisine has always been corn, vegetables (tomatoes, various types of beans and peppers), and among fruits especially avocado. During colonization, traditional dishes were enriched with, for example, wheat, rice, beef or pork or cheese.
The base of most dishes is tortillas, either corn or wheat flatbreads, which are used to prepare tacos (smaller filled tortilla), burritos (filled wrapped tortilla, usually baked), quesadillas (folded tortilla filled with cheese), or nachos (triangular chips made from tortillas).
Another typical element is sauces, commonly known as salsa. The base of the sauces is usually vegetables, but fruit is not an exception, typically complemented with chilli and other herbs, which provide a distinctive flavor. Salsas are used to season dishes or as dips. Among the most famous Mexican sauces are salsa roja (spicy red sauce), salsa verde (milder green sauce), guacamole (avocado sauce), or pico de gallo (sauce/salad made from finely chopped tomatoes and onions).
