Although this rice is very popular in Mexico, the recipe originates from the Arab cuisine. "Red rice" is made in different varieties around the world, but it always contains long‑grained rice, tomatoes and spices. It is a filling lunch or dinner.

Instructions

  1. Fry the onion using olive oil, then add chopped garlic and chicken. Mix well. Season with salt and pepper.

  2. Add the frozen vegetables, rice, tomato purée and the chicken stock.

  3. Mix again, cover with a lid and leave it to simmer for 20 minutes at high heat.

  4. When it's ready, mix in the beans, and top with cheese. Cover again with the lid and let it sit until the cheese melts. 

  5. Enjoy!
