Per 4 portions
- olive oil
- 1 onion
- 2 cloves garlic
- 1 red bell pepper
- 1 tbsp sweet paprika
- 500 g beef mince
- 1 tbsp beef broth powder
- 400 g tomato puree
- 400 g ready-to-eat kidney beans
- 1 packet sweetcorn
- salt
- pepper
- chilli
- oregano
- 2 cups basmati rice
- coriander
Instructions

Cut the onion, garlic and peppers into small pieces.

Heat the oil in a deeper pan or pot and sauté the onion and garlic over a low heat. Add the ground beef and spices.

Let roast, pour in tomato puree and add beans, peppers and corn. Cover with water, season with the stock mixture and simmer, stirring occasionally, for about 20 minutes.

Then season with fresh coriander.
