Nachos? Oh, yeah! They're a class movie snack with some cool dip, but we thought they deserved an upgrade. So, we've taken these crispy tortilla chunks, loaded them with veggies, meat, cheese and baked them to perfection. You'll be making this yummy dish for dinner, lunch or a party pretty darn often because the combination is just D‑E‑L‑I‑C‑I‑O‑U‑S!!! 🤩

Per 4 portions
- 1 packet ready-to-eat beef meat
- 2 tbsp ketchup
- 2 tsp sweet paprika
- 2 tsp oregano
- 1 packet tortilla crackers - chia & salt
- 100 g gouda
- 100 g cheddar
- 1 packet ready-to-eat black beans
- 1 red pepper
- 1 jalapeno pepper
- 1 onion
- 15 g sweetcorn
- lime
- coriander
- chilli
- pepper
Instructions

In a bowl, mix the beef (if you don't have our ready to eat, use roasted shredded beef), ketchup, ground pepper, pepper, chili powder (to taste) and oregano. Oh, and if you're into spicy, don't be afraid to add a tablespoon or two of chili sauce too.

Place the tortilla crackers in a baking dish, spread the meat mixture evenly over them, sprinkle with half of the cheese (we chose gouda and cheddar), add the beans, all the vegetables, top with the remaining cheese and bake in a preheated oven at 180 °C for about 15 minutes, or until the cheese is melted (be careful not to let it burn).

Serve topped with lime juice, cilantro, sour cream, homemade guacamole or your favorite sauce.
