Sopa Azteca is a traditional Mexican soup, with a rich aroma and flavour. It combines crunchy tortillas, spicy tomato base, and a distinctive flavour of cheese, which is toned down with avocado and sour cream. This dish is perfect for cold days or whenever you crave authentic Mexican cuisine.

Per 4 portions
- 4 tomatoes
- 2 jalapeno peppers
- 1 onion
- 3 cloves garlic
- 750 ml of chicken bouillon cubes
- 4 tortillas
- 100 g sour cream
- 1 avocado
- 100 g cheddar
- coriander
- salt
- pepper
- 2 tbsp olive oil
Instructions

Using a small amount of oil, fry the tomatoes, jalapeños, onion and garlic until the tomatoes start to burst and the jalapeños start to char.

Transfer into a blender, and mix until smooth.

In a saucepan, heat a tablespoon of oil and add the blended vegetables. Fry for a couple of minutes, until it starts to thicken.

Add the chicken stock and a pinch of salt and pepper. Leave it to simmer on medium heat for 20 minutes.

Meanwhile, cut the tortillas into strips and fry them in a pan until golden and crunchy.

Serve the soup in a bowl with the crunchy tortillas, pieces of avocado, grated cheese and a tablespoon of sour cream. Garnish with coriander.
