Sopa Azteca is a traditional Mexican soup, with a rich aroma and flavour. It combines crunchy tortillas, spicy tomato base, and a distinctive flavour of cheese, which is toned down with avocado and sour cream. This dish is perfect for cold days or whenever you crave authentic Mexican cuisine.

Per 4 portions

  • 4 tomatoes
  • 2 jalapeno peppers
  • 1 onion
  • 3 cloves garlic
  • 750 ml of chicken bouillon cubes
  • 4 tortillas
  • 100 g sour cream
  • 1 avocado
  • 100 g cheddar
  • coriander
  • salt
  • pepper
  • 2 tbsp olive oil

Instructions

  1. Using a small amount of oil, fry the tomatoes, jalapeños, onion and garlic until the tomatoes start to burst and the jalapeños start to char.

  2. Transfer into a blender, and mix until smooth.

  3. In a saucepan, heat a tablespoon of oil and add the blended vegetables. Fry for a couple of minutes, until it starts to thicken.

  4. Add the chicken stock and a pinch of salt and pepper. Leave it to simmer on medium heat for 20 minutes.

  5. Meanwhile, cut the tortillas into strips and fry them in a pan until golden and crunchy.

  6. Serve the soup in a bowl with the crunchy tortillas, pieces of avocado, grated cheese and a tablespoon of sour cream. Garnish with coriander.
