Do you love the peanut butter‑and‑jelly combo but also can't live without chocolate brownies? These luxurious layered bars combine both into the ultimate dessert. And they are completely raw, protein‑packed and work as a great quick energy boost. Make them over the weekend, store them in the fridge or freezer, and you will have the perfect, nutritionally balanced snack on hand every day of the working week. It will fill you up with energy and chase the sweet cravings away!🤤

Instructions

  1. Add all the brownie base ingredients to a blender and blend into a smooth, slightly sticky mixture. Line a bread tin (approx 23x13cm) with baking paper and then press the brownie mixture into the tin. Put in the freezer.

  2. Place the frozen raspberries in a small saucepan and heat them over a low heat slowly, crushing them. Optionally, you can add a scoop of collagen. In a small bowl, mix the starch with water and then add it to the raspberries. Mix until it thickens. Take it off the heat and leave it to cool. This is your raspberry jelly layer.

  3. In a bowl, mix all the peanut layer ingredients until you have a smooth cream.

  4. Take the brownie layer out of the freezer. Top it evenly with the peanut layer and then the raspberry layer. Place it back in the freezer for 1‑2 hours, until it's solid.

  5. Melt the dark chocolate and coconut oil in a microwave or a water bath. Take the bread tin out of the freezer and remove the contents. Cut into 5 long bars.

  6. Dip each bar into the melted chocolate, let it drip off, and then place it on baking paper. Drizzle with crushed freeze‑dried raspberries and place them back in the freezer for a little while.

  7. Store the bars in a Tupperware in the fridge. You can keep them like that for a week or so. You can also put them in the freezer, where they will keep for months. It's a proper energy bomb, so we recommend eating half a bar at a time – but it really depends on your calorie intake that day.
