Even though it looks sinful and gives the impression of being a real pig with the flashy name "Tiramisu Brownies", it is actually a healthy dessert! Well check out the ingredients for yourself, they boost it with a hefty dose of protein and you won't find any sin in them! 💪🏻

- 2 eggs
- 50 g dark chocolate
- 75 g cane sugar
- 50 g coconut oil
- 100 g plain flour
- 30 g cocoa powder
- 1 tsp baking powder
- pinch salt
- 500 g light curd cheese
- 300 g whipping cream 30%
- 50 g golden cane icing sugar
- 70 ml espresso
- 15 drizzles vanilla extract
- 15 g cocoa powder

In a small saucepan, heat the coconut oil and chocolate until melted and smooth.

In a bowl, beat the eggs and sugar until foamy (about 3‑5 minutes). Add the melted chocolate and coconut to the egg mixture and stir. Add the flour, cocoa powder, baking powder, and salt to the bowl. Mix well.

Pour the mixture into the prepared tin and bake for 20‑25 minutes. The brownies should be soft inside, so don't let them bake too long. Allow to cool.

In a bowl, whip the cream and sugar until stiff. Slowly stir in the cottage cheese, vanilla extract and brewed, cooled coffee (you can also add Amaretto if you want an alcoholic version).

Spread a layer of cream on top of the brownies and spread evenly.If you like, you can sprinkle the surface with cocoa or shaved chocolate for an extra look and taste.

Place the tiramisu brownies in the fridge for at least 2‑3 hours to allow all the flavours to combine and the dessert to set.
