- 3 eggs
- 250 g beetroot
- 30 g coconut oil
- 150 ml kefir
- 130 g erythritol
- 100 g wholegrain spelt flour
- 60 g cocoa powder
- 30 g chocolate protein
- 2 tsp baking powder
- pinch salt
- 80 g chocolate shards

Add a finely chopped beetroot to a blender with the eggs, kefir and melted coconut oil. Blend until completely smooth.

In a separate bowl, mix all the dry ingredients – flour, cocoa, erythritol, protein, a pinch of salt and baking powder.

Add the dry ingredients to the wet ones and combine until you have a smooth batter. Chop the chocolate into small pieces. Add about half to the batter and save half for decorating.

Pour the batter into a baking tray (25x30cm) and sprinkle over the rest of the chocolate.

Bake in an oven preheated to 180°C for 25‑30 minutes. Leave it to cool after baking.
