- 165 g beetroot
- 2 eggs
- 35 g oats
- 40 g cocoa powder
- 60 g date sugar
- 25 g plant protein cashew butter with vanilla
- 150 ml oat drink
- 1 tsp baking powder
- 40 g oat flour
- 400 g of skyr
- 35 g cocoa powder
- 50 g date sugar
- 1 tsp vanilla powder
Instructions

Peel and grate the raw beetroot into a large bowl. Add the oats, cocoa, both eggs, a pinch of salt, vanilla, nut butter, butter, date sugar and baking powder.

Pour in the milk and mix well so everything combines.

Grease a baking tin (approx 20x20cm) using oil and sprinkle in the oats. You can also use baking paper. Pour in the beetroot batter, smooth it over and bake it in an oven preheated to 185 °C for 35 minutes.

Whilst it is baking, mix the skyr with cocoa, date sugar and vanilla into a smooth cream.

Leave the brownies to cool a little, so they're not piping hot. Spread the prepared cream over the top. You can sprinkle some more cocoa over the top, or decorate it with a nut cream.
