They have the perfect crunchy outside, but they're smooth and moist inside thanks to the cottage cheese and yoghurt. They also pack a good portion of protein. - 100 g grated mozzarella cheese
- 1 egg
- 80 g Greek yoghurt
- 6 tbsp wholegrain flour
- 50 g Feta cheese
- 1 g spring onion
- 80 cottage cheese
- g of Italian seasoning blend
- salt
- garlic granules
- onion granules
Instructions

Preheat the oven to 190 °C. Line a tray with baking paper. Slice the spring onion finely and dice the Balkan cheese very finely (or just crumble it).

In a large bowl, whisk together the egg, Greek yoghurt and cottage cheese.

Add the wholemeal flour, garlic and onion granules, and a pinch of Italian seasoning and salt, to taste. Mix well until smooth, with no lumps.

Add in grated mozzarella. To finish, fold in the spring onion and Balkan cheese carefully. You don't want it to get completely mashed and want some pieces of it in the finished biscuits.

You should have a thick, slightly sticky dough. Using a spoon, transfer small piles of the dough onto the baking tray. Press down on them lightly to make patties.

Put the tray into the preheated oven and bake for 10‑15 minutes, until the edges are golden and the cheese on top melts slightly.

Take them out ot the oven and leave them to cool on the tray. They will firm up and be easier to handle.
