This is originally a Ukrainian recipe. They probably didn't know that they were making a protein‑packed fitness treat. That's because syrniks are almost entirely made of curd cheese. The curd cheese is complemented by a little amount of flour, creating a light batter for those delicious and smooth pancakes. So end of the chat, let's do it!

- 2 g fats
- 12 g protein
Per 9 portions
- 500 g curd cheese
- 2 eggs
- 30 g cinnamon protein powder
- 50 g spelt flour
- 1 tbsp coconut sugar
- 1 tsp vanilla powder
- pistachio
- raspberry jam
Instructions

Mix all the ingredients and create a batter. If it's too sticky, add more flour.

Using a spoon, cut away little chunks. Using your palm, form small balls and then squash them into half‑inch‑thick pancakes. You can wet your hands, so it's easier to work with the batter.

Coat the pancakes in flour before frying.

Fry them until golden on both sides on a medium heat, using a splash of coconut oil.

Serve them warm with whatever you fancy. We recommend plain yoghurt or one of our extra‑juicy Vilgain jams and some chopped nuts.
