Per 4 portions
- 250 g of ground turkey meat
- 50 g 30% edam cheese
- 1 egg
- 1 tsp of Italian seasoning blend
- 1 clove garlic
- 1/2 onion
- 1 tsp himalayan salt
- pepper
- 3 tbsp panko breadcrumbs
- 2 tbsp olive oil
- 425 g tomato passatas
- 2 tsp tomato puree
- 1 tsp of Italian seasoning blend
- 2 cloves garlic
- dried basil
- 1/2 tsp sweet paprika
- water
- himalayan salt
- 4 baguettes
- 4 tsp basil pesto verde
- 2 packets mozzarella light
Instructions
-
In a large bowl, mix the minced meat, egg, grated Eidam, breadcrumbs, garlic and the seasoning.
-
If the mixture is too thick, add some milk. Form balls.
-
Heat olive oil in a pan and fry the balls on all sides until golden brown.
-
When they're ready, transfer them to a plate but keep the juices in the pan.
-
Add the passata to the pan and add some tomato purée.
-
Add the minced garlic, seasoning, salt, pepper, and potentially a pinch of sugar. Leave it to simmer for 3‑5 minutes, so it reduces.
-
Add the meatballs back to the sauce, together with basil. Mix well and leave it to simmer for a bit, so the flavours mix.
-
Slice the baguette in half lengthwise. Place slices of mozzarella on the bottom half.
-
Bake both halves of the baguette in an air fryer (or the oven). Bake it at 185 °C first, for 4‑5 minutes, and then increase the temperature to 195 °C for the last minute. We want the baguette to be crunchy, and the cheese melted.
-
Transfer the baguettes to a plate. Place 3‑4 meatballs on half of the baguette with the melted mozzarella, and then pour over the sauce. Spread the basil pesto over the top half of the baguette and then make a sandwich, pressing slightly down on the meatballs.
-
Enjoy!
