- 60 g tomatoes

It's really mega easy!Cut two slices of sourdough bread. Spread one with good quality basil pesto and put sliced mozzarella and tomato on the other. Salt and pepper to taste and add a little balsamic.

Toast in a little ghee in a frying pan (you can also dry toast, but the ghee will make it crisp).
