You can also play around with the filling to suit your taste preferences - swap the chicken for tuna chunks or turkey breast, add your other favourite vegetables or spices and conjure up countless combinations that won't bore you. 🥪

Instructions

  1. First, toast your sandwich bread. Put it aside for a while and start preparing the chicken filling.

  2. Put chicken breasts onto a cutting board and shred them with a knife or fork into finer pieces.Simple Chicken Sandwich

  3. Then add the baby spinach, spring onions, yoghurt, mayonnaise, spices (we opted for pepper and slightly spicy granulated garlic) and finally a spoonful of onion chutney. If you want a sweeter mixture, put two.

  4. Grind everything with a knife to the desired consistency. It's up to you if you want to have larger chunks of ingredients in the filling or a smooth cream.

  5. Divide the mixture between the two toasted breads and cover with the remaining bread.
