Per 2 portions
- 4 slices sandwich bread
- 200 g canned chicken breasts
- 50 g baby spinach
- 20 g spring onion
- 2 tsp plain yoghurt
- 1 tsp light mayonnaise
- 2 pinches pepper
- 2 pinches garlic granules
- 1 tsp Vilgain chutney
Instructions
-
First, toast your sandwich bread. Put it aside for a while and start preparing the chicken filling.
-
Put chicken breasts onto a cutting board and shred them with a knife or fork into finer pieces.
-
Then add the baby spinach, spring onions, yoghurt, mayonnaise, spices (we opted for pepper and slightly spicy granulated garlic) and finally a spoonful of onion chutney. If you want a sweeter mixture, put two.
-
Grind everything with a knife to the desired consistency. It's up to you if you want to have larger chunks of ingredients in the filling or a smooth cream.
-
Divide the mixture between the two toasted breads and cover with the remaining bread.

In 5 minutes you have an epic meal on the table that fills you up and you don't have to fill up on some fast food or vending machine nonsense. So enjoy! 😋
