For maximum preservation of the health‑benefiting compunds, the olives are cold pressed into olive oil. Thanks to this processing method, the oil has approximately 100 times the polyphenol content of refined olive oil and approximately 10 times the content of olive pomace oil.
Olive oil excels in its content of unsaturated fatty acids, particularly oleic acid. Replacing saturated fats in the diet with unsaturated fats helps to maintain normal blood cholesterol levels.
