  • 10 g fats
  • 8 g protein

Per 15 portions

Batter:
  • 250 g spelt flour
  • 2 eggs
  • 30 g cocoa powder
  • 110 g ghee
  • 150 ml milk
  • 100 g date sugar
  • 10 g baking powder
Cream:
  • 450 g semi-fat quark
  • 1 egg
  • 10 g vanilla pudding
  • 30 g date sugar
  • pinch vanilla powder

Instructions

  1. First, prepare the cream. Whisk all the cream ingredients in a bowl until we have a smooth foam. Transfer that into a piping bag or a packet, and leave it in the freezer for 15 minutes.

  2. Meanwhile, prepare the batter. Whisk the eggs and sugar into a light foam. In a separate bowl, mix all the dry ingredients. Gradually add the dry mixture into the egg mixture and remaining liquid ingredients. 

  3. Pour the batter into a baking tin lined with baking paper (we used a 40x26cm tin).

  4. For the top, cut off about 1,5cm of the piping bag and make a grid pattern with the cream.

  5. Bake for 25‑30 minutes at 170 °C.

  6. Leave the cake to cool and then serve. Enjoy!
