- 250 g spelt flour
- 2 eggs
- 30 g cocoa powder
- 110 g ghee
- 150 ml milk
- 100 g date sugar
- 10 g baking powder
- 450 g semi-fat quark
- 1 egg
- 10 g vanilla pudding
- 30 g date sugar
- pinch vanilla powder
Instructions

First, prepare the cream. Whisk all the cream ingredients in a bowl until we have a smooth foam. Transfer that into a piping bag or a packet, and leave it in the freezer for 15 minutes.

Meanwhile, prepare the batter. Whisk the eggs and sugar into a light foam. In a separate bowl, mix all the dry ingredients. Gradually add the dry mixture into the egg mixture and remaining liquid ingredients.

Pour the batter into a baking tin lined with baking paper (we used a 40x26cm tin).

For the top, cut off about 1,5cm of the piping bag and make a grid pattern with the cream.

Bake for 25‑30 minutes at 170 °C.
