In this day and age, almost everything can be "high‑protein" and "fit". Even bread pudding. We are serious. One portion has 25g of protein. And even though it's a lighter version, you'll be surprised by the authentic and full flavour.

Per 6 portions
- 250 g večerního chlebíku
- 200 ml milk
- 15 g vanilla protein powder
- 360 g of lumpy curds
- 35 g cane sugar
- 2 eggs
- 25 g raisins
- 300 g apple
- 1 pinch cinnamon
- vanilla powder
Instructions
-
Tear small pieces of bread into the bottom of a baking tin (about half of the amount) and pour over about half the amount of the milk, mixed with the protein powder.
-
Mix the curd cheese with two egg yolks and sugar. Spread half of the mixture over the bottom layer of the bread.
-
Follow it with half of the sliced apples and another layer of the curd cheese. Add dried chokeberry or raisins and sprinkle with a small amount of cinnamon. Finally, cover with the second half of the apples.
-
Cover everything with the rest of the bread, torn to pieces and pour in the second half of the protein and milk mixture. Cover with tin foil and bake it at 180 °C for 30 minutes.
-
Beat two whites into stiff peaks and spread them over the bread pudding. Bake for another 20 minutes, until the stiff peaks turn brown. It's best to serve it warm, but it's also great the next day as a breakfast or snack on the go.

Enjoy!
