- 1 egg
- 40 g Feta cheese
- 1 slice sourdough bread
- 1 tbsp spreads from dried tomatoes
- 2 tbsp cream cheese
- 20 g baby spinach
- spice blend for bagel
- wildflower honey

Put the egg into boiling water and cook for 7 minutes. This is just enough time for the eggs to cook, but it keeps the yolk creamy, on the liquid side. Cool them in icy water, peel and set aside.

Prepare a non‑stick frying pan (it can be dry) and crumble the feta into it. Leave it to melt and fry until the edges are golden and crunchy.

When the feta is crunchy, add the soft‑boiled eggs. Lightly coat them in the melted cheese and season to your taste (you can use Bagel Seasoning, or any other seasoning you like).

Spread the cream cheese over a slice of sourdough bread (you can lightly toast it too) and then add the sun‑dried tomato paste.

Top the bread with fresh spinach, the cheesy eggs and finish with a drop of honey.
