Instructions
-
In a small bowl, mix all the sponge ingredients: egg, oat flour, protein, baking powder, soda water, almond drink and vanilla extract. You should get a smooth, thin batter.
-
Grease a baking tin or bowl (suitale fro microwabe) lightly with a drop of coconut oil and pour in the batter.
-
Place it in the microwave and "bake it" for 2 minutes or so (each microwave is different, so watch the sponge to make sure it doesn't escape the tin).
-
When the sponge is baking, sweeten the skyr with a couple of drops of stevia. In a separate bowl or mug, mix the cream ingredients: cocoa, coconut sugar and almond drink until you have a smooth and shiny cream.
-
Spread the sweet skyr over the hot sponge. Add the cocoa icing on top and smooth it over.
-
To finish, crumble over some crunchy biscuit and add your favourite topping. Enjoy!
