Spreads are a great way to incorporate more veggies into your diet. This beetroot spread has a few ingredients but a lot of flavour.

- 200 g beetroot
- 1 packet cream cheese
- 1 tbsp olive oil
- 1 tbsp wildflower honey
- 1 pinch salt
- 1 pinch thyme
- 1 slice sourdough bread
- 30 g Feta cheese
- sunflower seeds
Instructions

Cook the unpeeled beetroot in water until it's tender and then peel it. You can also buy a cooked beetroot to save time.

Add the cooked beetroot, soft cheese of your choice, one tablespoon of olive oil, honey, salt and thyme into a big bowl.
Using a handheld blender, mix until smooth.

You can serve it on a slice of fresh or toasted bread. It's great on its own, or with a little bit of feta. You can also sprinkle some seeds over, such as pumpkin.
