This spread is a lifesaver at any time of the day. It is ready in a couple of minutes (just roast some peppers), you can keep it in the fridge for days, and it works with everything – sandwiches, tortillas, with veggies or just as a spoonful. Thanks to the cheese and cashews, it has protein and healthy fats, and the roasted peppers bring sweetness and bold flavour that you'll never get tired of. And it's exactly the type of dish you want to have at your disposal when you are in a hurry but don't want to eat nonsense.😍

Instructions

  1. Wash the peppers and transfer them to the oven. Roast them for 50 minutes at 200 °C, until they're tender.

  2. Meanwhile, slice the cheese. You can chop the cashews. When the peppers are roasted, add everything into a blender (peppers, olive oil, cashews, cheese, garlic granules, salt and fresh coriander).

  3. Mix well until smooth. If needed, add a small amount of water.

  4. And now it's up to you how you serve it. We toasted some bread.
