Today we're focusing on a Vietnamese cabbage salad, which combines the flavours of crunchy vegetables and sweet and sour dressing, that you're simply going to love. Per 1 portion
- 300 g Chinese cabbage
- 200 g carrots
- 50 g red onion
- 3 tbsp apple cider vinegar
- 2 tbsp cane sugar
- 1 tbsp fish sauces
- 1 tbsp sesame oil
- 1 chilli
- 2 cloves garlic
- 1/2 cup coriander
- 1/2 cup mint
- 50 g peanuts
Instructions

In a large bowl, mix thinly sliced cabbage, carrot and red onion.

Prepare your dressing in a small bowl. Mix the apple cider vinegar, sugar, fish sauce, sesame oil, chilli and garlic. Mix until the sugar dissolves. Mix through the veggies.

Leave it to rest in a fridge for at least 30 minutes, so that the flavours can incorporate. Mix in roughly chopped coriander, mint, and peanuts just before serving.
