This is a fresh and nutritious couscous salad, ready in a couple of minutes. You can switch up the taste however you can, and it will save you when you're short on time and ingredients. You've gotta try it.

  • 200 g couscous
  • 1 packet tuna in brine
  • 1 pepper bell
  • 1 cucumber
  • 1 tomato
  • 1/2 onion
  • parsley leaves
  • mint
  • 20 ml lemon juice
  • 2 tbsp olive oil
  • salt
  • pepper

Instructions

  1. Cook the couscous according to the instructions. Usually all you need to do is pour over boiling water and leave it to stand, covered, for 5‑10 minutes, until it's tender.

  2. In a bowl, mix the tuna(drain the brine first), red pepper, cucumber, tomato, onion, parsley leaves and mint.

  3. Add the cooked, cool couscous and mix well.

  4. Add the juice of one lemon and drizzle with olive oil. Mix all the ingredients again.

  5. Season to taste, adding salt and freshly ground pepper.

  6. You can leave it in a fridge for a couple of hours to cool down and let the ingredients' flavours and aromas mix. You can garnish it with more fresh herbs before serving.
