Fermented vegetables are full of vitamins, and they are an excellent choice to accompany rice, meat or even noodles – as we did in this recipe. You will end up with amazing autumn dish.

- 240 g rice noodles
- 180 g pickled vegetable kimchi
- 2 carrots
- 1 red onion
- 2 cloves garlic
- 6 Portobello mushrooms
- 1/2 pepper bell
- ginger powder
- coriander
- spring onion
- egg
- sesame seeds
- salt
- pepper
- 1 tbsp sesame oil
- 3 tbsp soy sauce
- 2 tbsp maple syrup
- 1 tbsp rice vinegar
- 1 tbsp sriracha sauce
Instructions

Cook the rice noodles according to the instructions.

Slice the red onion and cut the carrot into matchsticks. Chop the red pepper and mushrooms, and finely chop the garlic. Fry it all with a small amount of oil.

Season with salt and pepper, and add chopped coriander.

Add in the cooked rice noodles and kimchi.

For the dressing, mix all the ingredients. Pour it over the mixture of noodles and vegetables and mix.

Serve it with a fried egg on top, sprinkled with sesame seeds, chopped spring onion and coriander. Enjoy!
