  • 1 whole wheat tortilla
  • 2 eggs
  • 100 g cottage cheese light
  • 1/3 tsp salt
  • 1/3 tsp pepper
  • 30 g baby spinach
  • 100 g cherry tomatoes
  • 30 g red onion
  • 1 tbsp chives
  • 30 g mozzarella
  • 1/2 tsp pizza seasoning mix

Instructions

  1. Tortilla Quiche Bake with Cottage CheesePlace one tortilla in an 18 cm diameter mould.

  2. Crack eggs into tortillas, add cottage cheese, salt and pepper. Mix with a fork.

  3. Cut the cherry tomatoes in half. Finely chop the spinach, onion and chives. Add the chopped vegetables to the tortilla with the egg mixture and mix again.
