- 1 wholegrain tortilla
- 2 eggs
- 100 g low fat cottage cheese
- 1/3 tsp salt
- 1/3 tsp pepper
- 30 g baby spinach
- 100 g cherry tomatoes
- 30 g red onion
- 1 tbsp chives
- 30 g mozzarella
- 1/2 tsp pizza seasoning mix
Instructions

Place one tortilla in an 18 cm diameter mould.

Crack eggs into tortillas, add cottage cheese, salt and pepper. Mix with a fork.

Cut the cherry tomatoes in half. Finely chop the spinach, onion and chives. Add the chopped vegetables to the tortilla with the egg mixture and mix again.

Sprinkle the top of the prepared quiche with cheese and pizza seasoning. Bake in a preheated oven at 180 °C for 25 minutes.
