- 350 g courgette
- 1 egg
- 30 g 30% edam cheese
- salt

- 55 g tomato puree
- 150 g tomatoes
- 100 g courgette
- 40 g of olive
- rocket

Preheat your oven to 220 °C.

Peel and finely grate the courgette and leave it to stand for 10 minutes. Then drain the excess liquid.

Mix the grated courgette with the grated cheese, egg and seasoning, and knead it into a dough. Using a spoon, transfer the dough onto a baking tray lined with baking paper and shape it into a pancake, about 2 inches high.

Bake it for 15 minutes until the top firms up and turns golden.

Top the base with the rest of the ingredients and bake it for another 15 minutes.
