Forget meat for the day! This caramelised oyster mushroom with guacamole and crunchy vegetables will show you how delicious plants can be. These vegan tacos take a couple of minutes to make, and you can switch up the taste, too. Per 1 portion
- 3 mini pizza bases
- 150 g oyster mushrooms
- 10 ml soy sauce
- 10 ml maple syrup
- 10 g sriracha sauce
- pepper
- 1/2 tsp onion granules
- 1 clove garlic
- 2 ml avocado oil
- 60 g avocado
- 40 g salad mix
- pickled red onion
- spring onion
- sesame seeds
Instructions

Start by gently frying clean and sliced oyster mushrooms, using a little splash of oil. Add soy sauce, maple syrup, sriracha, onion powder and pepper according to your own taste. Leave it to caramelise and then add one clove of minced garlic.

Dry fry the mini pizza bases until they turn golden and soften up (approx. 1 minute)

Meanwhile, mash the avocado and add salt, pepper or lemon juice according to your taste.

Time to load up the tacos! Top the pizza bases with avocado, salad mix (salad, shredded red cabbage, carrot), fried oyster mushroom and add final touches with pickled red onion, chutney, spring onion or sesame seeds. You can also add a little bit of sriracha.
