Per 4 portions
- 500 g of pattypan squash
- 1 onion
- 2 cloves garlic
- 2 tbsp olive oil
- 100 g cream cheese
- 2 tbsp sour cream
- 1 pinch salt
- 1 pinch pepper
- 1 pinch nutmeg

Instructions

Peel, deseed and chop the pattypan squash into small pieces. Chop the onion finely and slice the garlic.

Heat olive oil in a pan. Add the garlic and onion and fry until translucent and tender, about 5 minutes.

Add the chopped squash and fry for 2‑3 minutes. Then add some water, cover with a lid and leave to simmer until the sqush is tender, about 15 minutes.

Once tender, blend until smooth.

Add in the soft cheese and sour cream. Mix well until you have a smooth spread. Season with salt, pepper, and a pinch of nutmeg.

Serve it on fresh bread or herby crackers.
