"Shakshuka" is a hearty breakfast delicacy that was born in North Africa and gradually conquered the world. In Israel, the shakshuka has even become a traditional dish. In other countries, it proudly adorns the menus of popular breakfast cafes all over the world. 🥰
Shakshuka means "mixture" in Arabic. And that's what it is. It is a mixture of colourful vegetables, exotic spices and eggs. Although it is originally a breakfast dish, it serves just as well as a hearty lunch or dinner. 👌🏻

Per 2 portions
- 4 eggs
- 1 onion
- 1 red bell pepper
- 2 tsp olive oil
- 1 clove garlic
- 3 tomatoes
- pinch sweet paprika
- pinch oregano
- pinch chilli
- pinch ground cumin
- 200 g cottage cheese
- avocado
- coriander
Instructions

Put the crushed garlic, chopped onion and peppers in a pan with a little olive oil and sauté for 2‑3 minutes.

Add the chopped tomatoes, spices of your preference and a little water and let it cook for about 5 minutes covered with a lid.

Then make small pits in the mixture and knock 4 eggs into them and let them cook. The cooking time of the eggs is up to you, ideally when the whites are done and the yolks are still slightly runny.

Serve with half a sliced avocado, cottage cheese and sprinkled with coriander. If you like, you can add toasted sourdough or sandwich bread.
