A long, long time ago, this delicious salad was invented in the French city of Nice, bearing its name – salad Nicoise. It's full of veggies with an honest portion of tuna, new potatoes and black olives too. The salad is a light but fully‑fledged meal, ideal on a hot day.

Per 2 portions
- 250 g cherry tomatoes
- 200 g bean pods
- 300 g new potatoes
- 150 g iceberg lettuce
- 1 packet tuna in brine
- 60 g black olives
- 2 eggs
- 1 tsp olive oil
- 1 tbsp wine vinegar
- 1 tsp full fat mustard
- himalayan salt
- pepper
Instructions

Start by cooking the potatoes (skin on) and leave them to cool. Cook the green beans in salted water for 5 minutes or so, until they're fork‑tender. Wash them under cold water after cooking.

Prepare the dressing – mix the olive oil, red wine vinegar, mustard, salt and pepper until smooth.

Cut the boiled potatoes into smaller pieces and halve the tomatoes. Finally, mix all the ingredients. In a large bowl, mix the salad leaves, green beans, tuna, chopped tomatoes, tomatoes and olives. Pour over the dressing and mix well. Season to taste.

Serve it topped with a hard‑boiled egg. Enjoy!
