Tuna Nicoise salad

A long, long time ago, this delicious salad was invented in the French city of Nice, bearing its name – salad Nicoise. It's full of veggies with an honest portion of tuna, new potatoes and black olives too. The salad is a light but fully‑fledged meal, ideal on a hot day.

Per 2 portions

Salad:
  • 250 g cherry tomatoes
  • 200 g bean pods
  • 300 g new potatoes
  • 150 g iceberg lettuce
  • 1 packet tuna in brine
  • 60 g black olives
  • 2 eggs
Vinagrette:

Instructions

  1. Start by cooking the potatoes (skin on) and leave them to cool. Cook the green beans in salted water for 5 minutes or so, until they're fork‑tender. Wash them under cold water after cooking.

  2. Prepare the dressing – mix the olive oil, red wine vinegar, mustard, salt and pepper until smooth.

  3. Cut the boiled potatoes into smaller pieces and halve the tomatoes. Finally, mix all the ingredients. In a large bowl, mix the salad leaves, green beans, tuna, chopped tomatoes, tomatoes and olives. Pour over the dressing and mix well. Season to taste.

  4. Serve it topped with a hard‑boiled egg. Enjoy!
