- 3 eggs
- 100 g erythritol
- 130 g wholegrain spelt flour
- 50 g almond flour
- 2 tsp baking powder
- 1 tsp vanilla powder
- 30 g vanilla protein powder
- 100 g cranberries
- pinch salt

Start by prepping the apples – peel them and grate them. You should have about 300g of grated apples to use.

Add eggs and erythritol to the apples and mix.

In a separate bowl, mix all the dry ingredients - the flours, protein, baking powder, ground vanilla, and a pinch of salt.
Gradually add the dry mixture to the apple mixture and form a smooth batter. To finish, add the dried cranberries.

Pour the batter into a greased Bundt cake tin and bake in an oven preheated to 180 degrees for 30‑40 minutes, or until golden.

Leave it to cool before removing it from the tin, so it doesn't tear.
