- 250 g apple puree
- 200 g light curd cheese
- 200 g wholegrain flour
- 100 g wildflower honey
- 2 eggs
- 1 tsp baking powder
- pinch salt
- 50 g walnuts
- 50 g raisins
- 1 tsp vanilla extract
- 3 tbsp coconut oil
Instructions

Preheat the oven to 180 °C and prepare the muffin tin, lining it with paper cups.

In a bowl, mix the wholemeal flour, baking powder, cinnamon and salt.

In a separate bowl, mix the apple puree, curd cheese, honey, melted coconut oil and vanilla extract. Mix well.

Gradually add the dry ingredients to the wet ones, and mix until they're fully incorporated.

Add the egg and mix again.

Finally, add the chopped walnuts and raisins and mix carefully.

Divide the mixture between the muffin cups.

Bake in a preheated oven for 20‑25 minutes.
