Muffins are always a safe bet, and they work perfectly when you have some leftover fruit. The plum season is in full swing and that's why we opted for plum muffins.

Batter:
Crumble:
  • 50 g plain flour
  • 30 g cane sugar
  • 25 g butter
Topping:
  • 200 g plums

Instructions

  1. Preheat the oven to 180 °C and line the muffin baking tray with paper cups.

  2. In a large bowl, mix flour, sugar, baking powder, baking soda and a pinch of salt.

  3. In a separate bowl, mix the milk, oil, and vanilla extract. Add it to the dry ingredients and mix well until all the ingredients are blended. Pour the batter into the muffin cups, filling them up to two‑thirds.

  4. In a medium bowl, mix all the crumble ingredients. Place a plum on top of each muffin and top it with the crumble. Bake for 25 minutes.
