Clafoutis is a classic French dessert made with just a few ingredients, popular for its simplicity and delicious taste. It's a distant cousin to our bubblane, and you can fill it with anything - cherries, blueberries, currants or chokecherries. We went with seasonal cherries this time, and we didn't go wrong with our choice. 🍒

- 500 g cherries
- 100 g cane sugar
- 3 eggs
- 120 g plain flour
- 250 ml milk
- 1 tsp vanilla extract
- coconut oil spray

Preheat the oven to 180 °C and grease a tart tin (28 cm diameter) with coconut oil spray.

Spread the cleaned and pitted cherries evenly over the bottom.

In a large bowl, mix the sugar and eggs. Mix well until you get a smooth mixture. Gradually add the plain flour and mix thoroughly so that there are no lumps in the mixture. Add the milk and vanilla extract. Carefully pour the mixture over the cherries in the tart tin.

Bake for approximately 35 - 40 minutes, or until the top of the tart is golden and set. Let the tart cool after baking. Top with icing sugar or serve with a dollop of Greek yogurt or homemade ice cream.
