Dough:
  • 100 g spelt flour
  • 80 g golden cane icing sugar
  • 1 tsp baking powder
  • 1 egg
  • 100 g kefir
  • 1 banana
  • 1 pinch vanilla pods
  • 1 tsp cinnamon
Topping:
  • 3 tbsp semi-coarse flour
  • 1 tbsp ghee
  • 1 tbsp cane sugar
  • 6 plums

Instructions

  1. Yoghurt Plum Cake with CrumbleIn a large mixing bowl, combine the dry ingredients (flour, sugar, baking powder) and add a pinch of vanilla seeds. To get these, cut a vanilla pod in half and scrape out the inner part.

  2. Beat one egg, pour in the kefir and add the mashed banana.

  3. Pour the mixture into a buttered and floured baking tin. Top with halved plums and sprinkle with a crumble of semi‑coarse flour, butter and sugar.Yoghurt Plum Cake with Crumble

  4. Bake in a preheated oven at 180 °C for about 30‑40 minutes.
