For 2 servings

300 g cottage cheese
200 g strawberries
5 tbsp maple syrup
1 Coconut Bite
freeze dried strawberries

Instructions

Transfer cottage cheese, fresh strawberries and maple syrup to a blender. Blend until smooth.
Pour half of the ice cream into a bowl.
Crumble the strawberry coconut cookie over the ice cream and sprinkle with slices of freeze‑dried strawberries.
Top with the rest of the ice cream, sprinkle with strawberries and freeze in the freezer - ideally overnight.
Let the ice cream sit for at least 15 minutes before serving to help it scoop better.
