A full garden or a larder of fruit... it's a typical summer dilemma. Sure, porridge, popsicles, salads and pies are great but they can get a bit repetitive. That's why we've got the perfect solution: a fruit‑filled galette with minimal ingredients that anyone can bake in no time. We had plenty of peaches and cherries left over, so we used them and it turned out to be the best idea ever! Improve your day and bake this pocket full of freshness! 🍒🍑

- 200 g plain flour
- 100 g ghee
- 1 egg
- 30 g honey
- 1 tbsp cinnamon
- 5 tbsp water
- 2 peaches
- cup cherries
- 4 tsp honey
- 1 egg

Preheat the oven to 170 °C.

Mix all the ingredients for the dough in a bowl and add 4‑6 tablespoons of cold water, depending on how loose it is. Wrap the finished dough in cling film and leave it to rest in the fridge for at least an hour.

When you take the dough out of the fridge, roll it out on a floured rolling pin. Leave it about 3‑4 mm thick.

Using a round bowl, cut out 4 equal sized rounds. Place the fruit in the middle of each and drizzle with 1 tablespoon of honey. Fold the cherry and peach pieces in, but make sure there are about 2‑3 cm of margins in each circle.

And now it's time to pack the fruit. The loose edges we left on the wheel will serve us for this. All you have to do is fold them towards the centre so that the juices don't run out of the fruit when baking.

Finally, brush the edges with beaten egg and bake for 15‑20 minutes.
