Let's make this delicious dessert which combines the taste of coffee and raspberries.
We've swapped the traditional mascarpone for ricotta and curd cheese, which are less fatty and richer in protein. The perfect summer dessert everyone will love. Let's do it!

- 500 g ricotta
- 250 ml double cream 30%
- 250 g light curd cheese
- 100 g coconut sugar
- 30 g coffee
- 250 g water
- 300 g milk
- 200 g of ladyfingers
- 30 g freeze-dried raspberries
- 100 g raspberry
- 2 tbsp lemon juice
- 2 tbsp chicory syrup
- 1 tsp cornflour

For the cream, mix the ricotta, sugar, and curd cheese. In a separate bowl, whisk the cream into a thick foam. Make sure you don't whip it too much, so start slowly. Then add it to the ricotta mix.

For the raspberry layer: Cook fresh or frozen raspberries with two tablespoons of lemon juice and chicory syrup. Depending on the consistency, you can thicken it up with some cornstarch.

Next, make a strong coffee and mix it with hot milk. Dip the lady fingers in the coffee and milk mixture, and place them on the bottom of the dish. Follow with the cream, then raspberries. Repeat. You should finish with cream.

Cover the tiramisu with foil or clingfilm and leave it in the fridge, ideally overnight.
Before serving, cover it with the dust from freeze‑dried raspberries and top with a couple of fresh ones.
