- 175 g protein pancake & waffle mix
- 175 ml water
- ghee butter spray
- 90 g poppy seeds
- 120 ml milk
- 20 g ghee
- 25 g coconut sugar
- 250 g curd cheese
- 60 g vanilla protein powder

In a bowl, mix the pancake mix with water until smooth and lump‑free and let rest for a few minutes. Then fry the crêpes in a little ghee on both sides until golden brown. -
In the meantime, prepare both fillings:
👉🏻 For the poppy seed filling, combine the poppy seeds, milk, sugar and ghee in a saucepan and cook the mixture for a few minutes, stirring constantly, until it thickens.
👉🏻 For the custard, just whisk the cottage cheese with the vanilla protein. You can sweeten with stevia drops if you like.

In the end, just fill the crêpes properly - half of the filling is poppy seed, half is cottage cheese, roll them up and serve with your favourite topping.
