- 3 bananas
- 2 eggs
- 50 g wholegrain spelt flour
- 1/2 tsp baking powder
- pinch salt
- 1 tsp vanilla extract
- coconut oil spray
- wildflower honey
- pistachio
Instructions

In a bowl, mash two bananas. Add eggs and mix well.

Gradually add the flour, baking powder and a pinch of salt. Add the vanilla extract. Mix well until you have a smooth batter.

Heat a small amount of batter over medium heat. Using a spoon or a ladle, transfer the batter into the pan and fry the pancakes for 2‑3 minutes on each side, until they're golden and cooked through.

Using the same pan, we'll make a caramelised banana. Chop the remaining banana into thick rounds. Add a little bit of oil and a tablespoon of honey into a pan. Add the banana rounds and cook on each side.

Serve the pancakes with honey, caramelised banana and chopped pistachios.
