Per 1 portion
- 1/3 cup ricotta
- 1/2 cup Greek yoghurt
- vanilla stevia drops
- lemon zest
- pinch vanilla powder
- 2 tsp lemon juice
- 2 cups blueberries
- chicory syrup
- 3 tsp water
Instructions

Start with the ricotta cream: mix all the ingredients together and chill the mixture in the fridge until you have the rest ready.

Then prepare the fritters according to the package directions, optionally you can add any amount of stevia drops for extra sweetness.

Now it's time to make the blueberry dressing: put a cup of blueberries (fresh or frozen) in a pot, add lemon juice, chicory syrup, water and start simmering over low heat. Stirring constantly to keep the blueberries from burning.

After about 8‑10 minutes the blueberries will start to soften and crackle, then remove the flame and mash the blueberries.

Add the second cup of blueberries to the resulting sauce and cook for another 8 minutes.

Then just stack the fritters, top with blueberries, add the cooled ricotta cream and garnish with fresh blueberries and mint.
