Do you love the legendary Filet‑O‑Fish, but you don't love the fast food ingredients with questionable origins? Make it at home! Our version is nutritionally balanced – instead of frying the fish in a tub of oil, we roasted it, and we replaced the fatty tartare sauce with Greek yoghurt, to make it lighter. And the result? Juicy filet in a crunchy panko coating with over 30g of protein and an even better taste than the original. And the preparation is super easy too.

Per 2 portions
- 200 g African catfish fillet
- 2 tbsp plain flour
- 1 egg
- 2 tbsp panko breadcrumbs
- 2 ml ghee butter spray
- 2 English muffins
- 2 slices cheddar
- 3 tbsp Greek yoghurt
- 1 tsp mayonnaise
- 1 tbsp mustard
- 1 tsp dijon mustard
- 1 sterilized cucumbers
- 1 tbsp parsley sprig
- 1 pinch salt
- 1 pinch pepper
- 1 tbsp onion granules
- lemon juice
Instructions

Cut the filet (whatever fish you like; we used catfish). Season it with salt and pepper, then coat it in flour, followed by whisked egg, and finish with panko breadcrumbs. Spray it with some ghee and roast in an oven preheated to 200 °C for 15‑20 minutes, or in an air fryer heated to 200 °C for 10‑12 minutes. Flip it halfway through when using the air fryer.

Meanwhile, mix all the sauce ingredients. Slice and toast the buns. We recommend you make homemade ones.

And you can start layering – top the bun with some sauce, the fish, cheddar, more sauce and the top bun.
