Instructions

  1. Baked Courgette FriesPreheat the oven to 220 °C and grease a baking tray with olive oil.

  2. Wash and cut the courgettes into fries. Sprinkle with salt and let stand for 10 minutes.

  3. Crack the eggs into a bowl and whisk. In another bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, oregano and pepper.

  4. Pat the courgette fries dry with a paper towel. Then coat each fry first in the eggs and then in the dry mixture.

  5. Spread the coated fries evenly on a baking sheet and bake in a preheated oven for 20‑25 minutes, until golden and crispy.
