- 2 courgette
- 1 tsp salt
- 2 eggs
- 200 g panko breadcrumbs
- 1 tsp garlic granules
- 1 tsp oregano
- 1/2 tsp pepper
- olive oil spray
- 2 tbsp parmesan
Instructions

Preheat the oven to 220 °C and grease a baking tray with olive oil. -
Wash and cut the courgettes into fries. Sprinkle with salt and let stand for 10 minutes.

Crack the eggs into a bowl and whisk. In another bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, oregano and pepper.

Pat the courgette fries dry with a paper towel. Then coat each fry first in the eggs and then in the dry mixture.

Spread the coated fries evenly on a baking sheet and bake in a preheated oven for 20‑25 minutes, until golden and crispy.

Serve warm, ideally with your favourite sauce. They are delicious with basil pesto, for example. Enjoy!
