Per 2 portions
- 250 ml milk
- 15 g tapioca flour
- 10 g cocoa powder
- 30 g chocolate protein
- 150 g curd cheese
- natural stevia drops
- raspberries
Instructions
-
In a small saucepan, whisk milk with the tapioca starch and cocoa thoroughly, over no heat. Then transfer it to the hob and bring to a boil. Cook whilst stirringly continuously, until you have a thick, custard consistency.
-
Once thick, take it off the heat and leave it to cool. This is crucial – if you add the protein powder to a hot custard, it would create lumps and would never be smooth again. If you want it to cool faster, put the saucepan into a sink filled with cold water.
-
Add the quark, chocolate protein and stevia (or another sweetener) to the cold custard. Mix well (you can also use a hand‑held mixer for extra smoothness) until you have a perfectly smooth chocolate cream.
-
Divide the cream into your jars or pots and leave it to rest in the fridge for at least 30 minutes. This will make the cream firmer and allow the flavours to combine.
-
You can top it with whatever you like before serving – banana slices, fresh raspberries, chopped nuts or a couple of pieces of dark chocolate.
Enjoy!
