Hash browns are an American breakfast classic, popular for their crunchy outside and soft inside. It's a quick dish that can level up your breakfast or be used as a side dish.

- 4 potatoes
- onion
- 1 clove garlic
- salt
- pepper
- 1 tbsp plain flour
- Thyme
- 1 tbsp butter
- 2 tbsp olive oil

Wash the potatoes thoroughly. Peel them and then roughly grate them. Immediately soak the grated potatoes in a bowl with ice‑cold water, so they don't oxidise and change colour.

Peel and roughly chop the onion and garlic. You can also grate the onion.

Take the potatoes out of the water and squeeze the excess water, or pat them dry with a teatowel or kitchen towel. Try to get as much water out as you can.

Mix the drained potatoes, chopped onion and garlic, salt, pepper and chopped fresh thyme. To make them extra crunchy, add a tablespoon of flour and mix well.

Heat a mixture of oil and butter over medium‑high heat. This combination makes the hash browns crispier and more delicious.

Pour in the potato mixture and form a 1cm thick circle or rectangle.

Fry the hash browns on both sides until crispy. Transfer them onto a plate with a kitchen towel, which will absorb any excess fat.
