Are you craving something different, quick and good? Try this grilled tofu, full of flavour and colour, thanks to the pepper sauce, broccoli and corn. It's a great lunch or dinner, and we can guarantee you won't feel peckish anytime soon.

Per 2 portions
- 1 packet tofu
- 1/2 tsp chilli flakes
- 2 tsp olive oil
- pinch pepper
- salt
- ground paprika
- 1 clove garlic
- 1,5 red bell pepper
- salt
- 1 mozzarella
- pinch pepper
- 1 tsp olive oil
- 80 g basmati rice
- 100 g broccoli
- 1/2 packet sweetcorn
- parsley leaves
Instructions

Cook the rice according to the instructions and simultaneously cook 3 florets of broccoli for about 5 minutes.

Meanwhile, slice the tofu in half. Cover each piece in chilli flakes, pepper, smoked paprika and salt.

Add chopped parsley and oil (one teaspoon per piece of tofu).

Using your fingers, make sure that the tofu is coated in the herbs and seasoning and leave it to marinate whilst you make the sauce.

Add a teaspoon of oil to a small pan. Add chopped pepper and garlic (you can also add tomatoes if you like).

Fry and mix as needed until they are golden brown (about 5 minutes). Season with salt.

Transfer into a bowl and add the chopped mozzarella. Blend with an immersion blender.

If the mozzarella isn't fully blended, leave it to cool for a bit and blend again until you have a thick sauce. Season according to taste.

Mix the cooked rice with the corn. Tear the broccoli into smaller pieces and mix it in too. And now you are ready to serve.

Add two scoops of rice to a plate, followed by the tofu, sauce, and garnish with some parsley.
