This is a super easy and super juicy pie that also works if you are watching your weight this summer.

Pie:
Crumble:
  • 25 g ghee
  • 40 g oats
  • 30 g erythritol

Instructions

  1. Preheat the oven to 170 °C.

  2. In a large bowl, mix all the dry ingredients – flour, coconut, protein powder, baking powder, erythritol (or a different sweetener).

  3. Add in the eggs and yoghurt. Work into a liquid batter and add in the raspberries.

  4. Pour the batter into a baking tin, either lined with baking paper or greased. It should be about 22 x 16 cm in size.

  5. To make the crumble, mix the oats, erythritol and room‑temperature ghee. Top the pie with the crumble and press it down lightly.

  6. Bake in a preheated oven for 50 minutes.

    Let the baked pie cool. Enjoy!
