- 2 slices toast bread
- 2 eggs
- 50 g red bell pepper
- 20 g of edam
- 2 slices tomatoes
- 1 tbsp olive oil
- himalayan salt
- pepper
- rocket
- 1 tuna burger
- sriracha sauce
Instructions

Thinly slice the red pepper. Chop the parsley finely.

Whisk the egg with some salt and seasoning.

Heat a tablespoon of olive oil in a frying pan, then add the pepper and parsley. Mix and fry for a couple of minutes. Pour over the egg mixture.

Fry for a bit and then add the bread. Then turn the bread over and fry for a little bit more.

Then turn the whole sandwich over, so it's fried on both sides. Transfer it to a plate and sprinkle over the grated cheese.

Fry the tuna patty for a bit. Then transfer it to the top of the bread and egg sandwich, drizzle over some sriracha and add rocket. Top with the other part of the sandwich and it's ready.
