- 5 eggs
- 50 g Feta cheese
- 1 pinch avocado oil
- 1 tbsp olive oil
- 1 pinch salt
- 1 pinch pepper
- 2 whole wheat tortillas
- 100 g cherry tomatoes
- baby spinach
Instructions

Preheat the oven to 180 °C and grease a baking dish with avocado oil.

Place a block of feta in the centre of the prepared baking dish.

Crack 5 eggs around the cheese and drizzle with olive oil. Salt and pepper the eggs. Bake in the preheated oven for 18‑22 minutes, until the cheese is melted and the egg whites are cooked.

Mix the eggs and feta together with a fork.

After baking you can add chopped chives or spinach. Fill a whole wheat tortilla with the mixture, add tomato slices, roll up and enjoy.
