- 100 g Greek yoghurt
- 115 g spelt flour
- 2 pinches salt
- 1/2 tsp baking soda
- 15 g coconut sugar
- 1 tsp cinnamon
- 1 tbsp maple syrup
- 2 tbsp Greek yoghurt
Instructions
-
In a bowl, mix the yoghurt, baking soda, salt, and 150g of spelt flour (keep the remaining 10g on the side). Form a compact and non‑sticky dough.
-
Use the remaining flour for your working surface to ensure the dough doesn't stick to it. Then roll it out into 2‑3mm thickness.
-
Mix the nut butter with coconut oil until smooth and spread it evenly over the dough.
-
Roll the dough up, then slice it into 4- 5 cm thick rounds and then slice each round in half.
- Take one half‑round and form it into a ball. Mix the coconut sugar with cinnamon and coat the balls in the mixture.
-
Place in a baking tray, sprinkle with more cinnamon sugar and drizzle with maple syrup. Bake in an oven preheated to 180 °C for 15‑20 minutes.
