Per 6 portions
- 90 g oat flour
- 60 g vanilla protein powder
- 1/2 tsp cinnamon
- pinch vanilla powder
- pinch salt
- 70 g almond butter
- 100 g of medjool dates
- 2 tbsp almond milk
- 1 tbsp maple syrup
- 60 g dark chocolate chips
- 1 tbsp coconut oil
- 30 g protein crispies
Instructions
-
Stone the dates and soak them in hot water for at least 10 minutes.
-
Meanwhile, in a bowl, mix all the dry ingredients – oatmeal flour, vanilla protein, cinnamon, ground vanilla and sea salt.
-
Blend the dates with 2‑3 spoons of water into a thick paste. Add the water gradually; the goal here is a thick cream, not a sauce.
💡 We recommend using Medjool dates, which are soft and juicy, and also using a strong blender.
-
Add the date cream, almond butter, milk, and maple syrup to the dry mixture and create a dough (start by using a spoon, then your hands). If the dough is too sticky, add more flour.
-
Form bigger balls (dough should make about 6 pieces).
💡 To make the work with the dough easier, put it in the fridge just ahead of making the balls and wet your hands with cold water before you start shaping the balls.
-
Melt the chocolate pieces and coconut oil using a water bath. Mix in the protein crispies.
-
Coat each ball in the chocolate and crispies mixture, and transfer it to the fridge. Leave it to cool and solidify for at least 2 hours.
-
Enjoy!
